I love cooking and hosting and today, my sonβs godmother visited me with her mum, who was visiting me for the very first time.
Your girl got all excited and took to the kitchen to do what she knows best ‘hosting’. I love it like a Christmas present ππ.
I love my roots and get to flaunt our traditional dishes whenever I can.
This meal in question is full of iron for anyone who is anemic or need iron. While I was pregnant, whenever my midwife told me my iron count was low. This dish always did the restoration, if I have it regularly.
Enough said, I hope you have got your pans and pots ready ππ.
My ingredients:
Onion, salt, seasoning cube, all purpose seasoning.
Spinach = I used 12 packs (it’s easier because there is no need to chop it up).
Palm oil (you can also use vegetable oil)
Meat I used smoked fish, smoked turkey, dryed King prawn and goat meat. (you can use whatever meat that suits you π).
Uziza leaf (optional)
Yam: my preferred option would be ripe plantain but it was out of stock at the supermarket
Blackeye kidney beans (picture below is boiled already.
It is a Nigerian dish. The stew is made of spinach which is served with boiled beans and yam. However you can serve it with anything else e.g. Rice, pasta or spaghetti, garri or corn flour (any swallow of your choice as it is often called π – my friend laugh so hard when I said swallow)
So first,
I washed my beans and boiled it in water till it was as soft as can be(I used salt and seasoning cube to taste)
Beans takes a bit longer to cook properly that’s why I started with it.
I went for beans because it is healthy and contains protein. Rice has become boring for me because that’s what everyone seems to go for.
The stew:
I boiled my meat (goat, turkey, smoked fish and dried King prawn – seasoned to taste using Maggi cubes, little salt, half onion and all purpose seasoning. I boiled to soften so much but not overcooked. (and very little meat stock to avoid a watery stew).
Whilst that this was boiling, I steam my spinach and sieved it. Result is below
Next I blended my Uziza leaf (optional) and added it to my well cooked meat.
Fried my spinach in red oil and half chopped onion (seasoned to taste and added it to my meat).
I went for red oil because its rich in vitamin A and also isn’t much noticed in green vegetable.
Lastly I boiled my yam which was a new yam, so didn’t take long to cook. Served it with my boiled beans. The yam is a carbohydrate dish, (plantain would be a lot better due to the sweet taste)

Served with a cold Malt drink ππ
My son had his stew with spaghetti
And could not stop saying yummy π.
