I’m going to share with you my quick and easy way of making fried rice. I’m feeling hungry, I hope you are?
What you are going to need is:
Chicken stock or
Vegetable stock (for vegetarians)
Seasoning cube (I will be using Maggi)
Vegetable oil or sunflower oil
2 Green Peppers
I am going to serve mine with grilled chicken, so I will start off with steaming my seasoned chicken. I will be using the stock from my chicken to make my rice.
Once chicken is boiled, put chicken in the oven and grill to your taste. Set aside the stock.
For your rice:
Pre boil rice
Rinse in cold water and seive
Then boil rice in chicken stock (or vegetable stock) with water level at the same level with your rice.
Add seasoning to your taste (I am using little salt, Maggi and chicken cube)
For your vegetables:
Chop 1 whole onion and 2 green peppers and stir fry in vegetable oil (very little oil) for 3 to 5 minutes, adding Thyme and rosemary.
Then add your mixed vegetables
Salt to your taste
Seasoning cubes to your taste
Stir for 2 to 3 minutes and set aside
Your vegetables should look like this below;
Once rice is boiled,
Add rice to your vegetable and stir.
Leave to simmer for 3 to 5 minutes.
Then serve……… Well done! 😋😋
